Selvole has unique characteristics in the Chianti Classico area. Apart from being one of the oldest wineries of the area, with an old castle which witnessed major historical events and battles, the majority of its vineyards are located in the small valley between Selvole and Brolio where the Chianti Classico was born 300 years ago. We cultivate 30 hectares (almost 70 acres) of vineyard, half of which are newly planted at very high density. We have Sangiovese and Canaiolo, as well as Merlot, Cabernet Franc and Cabernet Souvignon With these grapes we produce thee Chianti Classico: Annata, Riserva, Gran Selezione, our two Super Tuscan, the Barullo, and the Frescolaia, and also three single varieties, Merlot, Cabernet Franc and Cabernet Souvignon.
For a number of years the supervision of our wines was conducted by Yves Glories,then Dean of the oenologyc department at Bordeaux University, author of several books on this subject and former oenologist of Chateau Petrus. He helped set up the present company structure in the vineyard and in the cellar. After his retirement from Bordeaux University, Yves offered to assist in laying the ground work for the winery we had recently acquired in 1999. He oversaw the planting of Cabernet Sauvignon, Cabernet Franc and Merlot with vines bought in France. He planted at a density of 8000 plants per hectare, as done in Bordeaux. In addition he introduced using Bordeaux barriques. He also instituted pre-maceration fermentation in temperature-controlled stainless steel. Yves, who had designed the cellar of Sain Emilion Cooperative, the most advanced cellar of the Bordeau region, insisted that the equipment be capable of very quickly raising or dropping temperature as needed.
When he prematurely passed away, we replaced him with Gianni Menotti, a very experienced oenologist, appointed twice by the Gambero Rosso best oenologist of the year.
