VINEYARD:
Position: hillside, southwestern exposure
Altitude : 100-127 metres above sea level
HARVEST: end of August – first week of September
Manual harvesting and rapid transfer to the cellar for vinification
VINIFICATION: Immediately after a very soft pressing, the skins are separated from the must, which ferments at a controlled temperature of maximum 18° C. in stainless steel vats.
AGEING: The ageing in carried out on the vinification yeasts inside the stainless steel vats.
The wine in bottled after few months from the harvesting.
ORGANOLEPTIC PROFILE: Yellow straw-COLOURED, with golden highlights. The FLAVOUR is fine, mild with floral notes of hawthorn and wild rose. The TASTE is lightly ethereal but well structured, the aftertaste is fruity aftertaste.
SERVING ADVICE, FOOD PAIRING: Recommended serving temperature: 10°-12° C;
Thanks to its charachteristics it is well appreciated as aperitif and together with starters and fish dishes.
