Production Area
North-West of Bari area, 420 meters above the sea level.
Grape Varieties
Uve di Troia, Cabernet Sauvignon & Merlot in different proportions based on the vintage.
Vineyards
Apulian pergola vines, on a semi-calcareous soil.
Vinification
The grapes are harvested during the end of October. Long maceration with frequent pumping over for oxygenation and délestage in stainless steel tanks, with selected ferments and at temperatures of less than a 25°C, are the conditions for the perfect extraction of the colorant and aromatic substances.
Maturation
The refining phase occurs in stainless steel tanks and afterwards in the bottle, for about 3 months.
Tasting Notes
Intense ruby red color, it develops typical fragrances such as red fruits and coffee; aromatic flavor, soft at the palate, well-balanced tannins.
Food Pairing
Great if paired with sapid dishes such as roasted red meats, game, and aged cheese, ragù and lasagne.
Serve at room temperature and uncork a few minutes before tasting.
