Production Zone
The vineyard is located in the area of Acciarella, in the township of Latina, about 2 km from the sea. Grape production is limited to 50 quintals (5000kg) per hectare.
Vinification
The grapes are harvested by hand in October. After they are destemmed and crushed, the must is fermented for 15 days at a temperature of 28°C in stainless steel vats with daily
“délestage” and breaking up of the cap. At the end of the first fermentation, the wine is racked, then gently pressed. Malolactic fermentation takes place for 6 months in tonneau,
6 months in Allier barrique. The wine is then finished in the bottle.

Sensory Characteristics
Rich ruby red color. Intense and compact nose with notes of ripe red fruit, juniper, leather, spice, tobacco and pleasant minerals and balsam. Powerful and elegantly well structured
to the palate with soft, velvety tannins. The wine expresses emphasis, warmth, opulence, class.
Parings
Served at a temperature of 18-22°C, the wine matches beautifully with red meats, game, stews, mature cheeses.
