Chianti Colli Senesi Docg 2016 - Biologico

GRAPES: selection of 100% Sangiovese Grapes
Alcohol content: 13,50%

Vinification: Vines are cultivated by spurred cordon, with a density of 4.000 vines per hectare. The harvest takes place between the 15th September and the 15th October, with a maximum yield of 80 quintals/hectare, while the maximum yield of the grapes in finished wine is 70%.
The 100% Sangiovese grapes are hand-picked into boxes, cleaned and gently pressed. This is followed by traditional vinification, leaving the skins for 9/12 days for to provide the right degree of noble tannins and a good intensity of colour, producing a soft bodied wine with an ideal structure for aging.
Then wine is moved and aged in 7,50 hl French Tonneaux for 6 months
and refining in bottles at least 6 months.

Organoleptic characteristics:
Brilliant dark ruby red in colour, with purple reflection, this wine has an intensly and well pronounced bouquet with notes of violet and red-berry wild berris.
Dry flavor with long aromatic sensations of good duration and intensity.
It has a marked aptitude for medium aging.

To combine: Chianti Colli Senesi is, to all effects, a wine for all meals. It goes perfectly with all the tuscan products, confirming excellent with the very tasty Tuscan cold cuts, with pecorino cheese and very well accompanied with Tuscan first courses and soups such as the typical ribollita, based on bread and vegetables or the bean soup. Excellent with Florentine steak, grilled meat and "Cinta Senese" pork dishes.
